Have you ever been inspired to cook by the recipes in Glitch? I immediately wondered why I'd never thought of Mexicali eggs, they're delicious and easy. Here's the slightly-modified real life recipe (4 generous servings):
Ingredients
8 eggs
4 large tortillas (flour or corn, your choice)
1 tbsp butter
1 medium onion, diced (anything but red)
1 pint cherry tomatoes, halved (or one large tomato, chunked or diced)
1 can chipotles in adobo
1 can black beans, rinsed
1-2 cups shredded cheddar cheese
1 container plain yogurt (optional)
Steps
In a deep sautee pain or wok, melt the butter and sweat the onions for about 10 minutes on medium heat. Don't caramelize them, just cook them til they're nearly translucent.
When then onions are done, add one chipotle and a few spoonfuls of adobo sauce (more if you like spicy food; put the rest in a resealable container in the fridge, they'll last forever) and stir til onions are coated. Next, add the black beans and tomatoes and stir them around til they're hot.
In a separate bowl, scramble the 8 eggs. Slowly stir them into the mixture in the pan, then stir in the cheese. Continue stirring until the eggs are fully cooked.
In the oven or microwave, warm up the tortillas.
Lay each tortilla out on its own plate, and spoon the eggs onto them so that half the tortilla is covered. Fold the tortilla over. Drizzle it the whole thing with plain yogurt, and dig in!
If you want to be really decadent, you could wrap the eggs in a cheese quesadilla rather than a plain tortilla.
