Giant symbols on tombstones?
What do they indicate?

Not sure what determines them in the first place, but it's the giant who gives you 5 favor if you Mourn or Celebrate.

I've heard that it's determined by whichever giant the newly-departed has the most favor with.

I thought it was the last giant that the deceased donated to... maybe?

I concur with Crrrystal, and it is definitely not random, I have done experimentation, watching the same glitch die multiple times, and also having someone check my tomb after multiple deaths.
In my case it was indeed the giant with whom I had the most favor.
There is also a theory though that it is the giant that you are Closest to attaining an emblem from.
I have not tested that theory.

These are the same thing.
The symbol is whichever giant you currently have the most favor with (in terms of earning an emblem)

"the most favor with" might also refer to the lifetime accumulation of favor with a particular giant, which you can check here for your character by clicking on each giant in turn

MarbhDamhsa: it is possible in special cases, such as Humbabella's donations to Humbaba, or Liza Throttlebottom's donations to Grendaline (right?) to have vastly more favor numerically with one giant, but still be much closer to earning an emblem from another. Say:
Humbaba: 14765/60000
Friendly: 2000/2100
I donate to the giants evenly, but not everyone does :)
