The desire for Glitchen created (not vender bought) honey is long-desired. However, right now honey also functions as a currant sink, at 10c each. So any method of generating honey needs to be carefully balanced to not inject too many currants. In other words, it cannot be hugely profitable. What I'm proposing will not be very feasible for new players, so at least in the beginning honey would remain available at vendors.
If honey was straight harvestable item, I think it would be too profitable. So what I think would work well is having a method to "brew" rather than harvest, very similar to the hooch mechanic. Using a new type of still (e.g. a beehive), raw materials could then be turned into honey, turning out 1 honey for every 6c worth of herbs or 10c worth of grain.
* Purchasing the beehive would make for an upfront currant sink
* Beehives need honeycombs, which can be bought, preserving some degree of a currant sink, or
* Honeycombs can be made, using paper as a raw material, in a paper press
* Operation of the beehive & paper press could be further gated by a new skill / upgrade card
