My "Real Life" Ur Cookbook Experiments: Ix-Style Braised Meat

Sometime ago there was a forum thread on real-life cooking inspired by Ur recipes. I can't seem to find it. BUT! That's not the point. The point is...

Tonight I shall be experimenting with Ix-Style Braised Meat. It'll go something like this:

1. Slice a pound of beef brisket to 1/4" thickness. Ish.
2. Rub slices all over with salt and pepper.
3. Brown at medium heat in olive oil.
4. Add [some bubbly liquid] and allow to simmer, covered, until tender. (Possibly transfer to a crockpot/slow-cooker at this point.)

The fourth step is what I'd love some feedback on. If the recipe called for "Tiny Bubbles," I'd use cheap champagne, or maybe 7-Up/Sprite (hey, this is a fine old U.S. tradition, using soda pop in cooking! Look it up in the Gallery of Regrettable Foods!). If "Hard Bubbles," I might use ginger ale or sparkling cider. But Ix-Style Braised Meat is made with for "Blue Bubbles." What would you use in real life for blue bubbles?

What comes to my mind is that awesome bubble-gum-flavored soda pop out of Japan, with the little glass bead sealing it at the top. I forget what it's called. But I fear this may be too sweet, and I'd hate ruining even a cheap brisket.

  • Ramune is tasty but i wouldn't cook with it - pure sugar syrup. Does it count if you wash sonething down with it? ;) my vote for blue bubbles is a liqeur, like maybe blue curacao? Or... SOAP! :D

  • Shipwreck, I think I just might. I already keep a blog called "actually writing," and sometimes I do food posts because, hey, writers gotta eat. So... why not.

    Flirty, that was my fear with Ramune. Too, too sweet. As for curacao, I thought of it, but it lacks bubbles. (Also am not very fond of the flavor.) Soap has bubbles, but it lacks edibility.

    I went with Zevia grape soda, because A) it provided the bluest bubbles at my grocery store, and B) grape soda just screams Ix. Both can legitimately be described as "wacky." Also, Zevia's pretty darn sweet, but at least it's stevia and not sugar.

    The browned brisket pieces are in the crockpot ("high" because I don't want to wait forever and a day; just forever, period, seems sufficient) in about half a can of the Zevia. I'll report the findings (i.e. HOW'S IT TASTE?!) on the thread whose link Sheepy dug up for me. (And how the heck did you do that? EDIT: Oh, wait, you were the originator of that discussion. Well, THAT'S GOTTA HELP.)

    I've saved some brisket to try in ginger ale. I don't have any champagne around the house though. Woe.

  • Got your invite, o fellow engineer (i assume) -- will be right over!

    (taste-tested the meat after about an hour and a half of crock-pot; it's not tender yet, but it tastes pretty good! Sort of savory and berry at the same time...)

  • Pork works well with sweet braising liquids. Maybe try a pork shoulder cut instead of beef brisket? After all, the meat is nibbled off a pig :)

  • Bwah, if all fruit come from cherries, all meat comes from pigs. I figured I'd just go with a notoriously tough cut of meat.

    Perhaps it is the bubble gum that is Ramune flavored.

    Had to add some liquid; next time would use the full can of soda. I may serve it with a side of fried rice.

    EDIT: 3 hours in the crock pot is just about right. It's very tasty! I forgot to take photos this time. Next time, when I perfect this, I shall!

  • Has anyone came up with RL Messy Fry Up?
    It *looks* simple enough. Bits of potatoes, some onion, bit of butter, some corn.....
    Mum does a version of it sometimes. It consists of stir fried carrot, onion and corn. And a bit of oil. Not quite messy fry up but, oh well.
    Keepin mind I don't know anything. I don't approach stoves willingly, for fear of setting something on fire.

  • If you're going with brisket, I'd try using some kind of beer/Ale (not lager though) or cider  -the cider would work well for the pork too;-)  Just add a little blue colouring or maybe whortleberries/blueberries/bilberries ..although not keen on the idea of blue coloured food LOL!

  • I just bought a 12 quart cooking pot. It is exacrly like the awesome  big pot in Glitch. I did a pot roast in it yesterday. I plan on making awesome stews this winter....I can get all the veggies used in the game. I will be well nourished.

    Cupcake: saw your thread! It was fun!

    For the blue bubbles, someone suggested Izze soda in Blueberry flavor. I do love an Izze.

    I have since become very distracted by idea of covering the browned brisket with cantaloupe chunks, and crock-potting it like that. Nothing to do with Glitch; I just enjoy braised brisket, and cantaloupe is AWESOME.

    Messy Fry-up sounds delicious. I think I have all the ingredients on hand. Maybe for breakfast tomorrow.
